Ingredients

  • Bone Suckin’® Cajun Seasoning & Rub, 4.2 oz
  • Brown Sugar, 1 lbs
  • Coarse Salt, 1/2 lbs
  • Water, 1 gal
  • 1 Turkey - up to 20 lbs.
  • 1 Oven browning bag

Method

Step 1

Combine Bone Suckin’® Cajun Seasoning & Rub, brown sugar, coarse salt and water in a large pot and warm up the pot enough to melt the sugar & salt.

Step 2

Let cool to room temperature.

Step 3

Remove the neck, giblets, and pop up indicator (if turkey has one) from inside turkey.

Step 4

Place the turkey, breast side down, into browning bag and set inside a deep pot for support.

Step 5

Pour the brine mixture into a bag, seal tightly, removing the excess air.

Step 6

Place in the refrigerator overnight.

Step 7

If there is no room in your refrigerator, place the sealed bag in an ice chest or water cooler like those orange 5 gallon beverage coolers & cover with ice. Let sit in brine overnight.

Step 8

Remove the turkey from the brine mixture 30 minutes before cooking or grilling. Discard the brine mixture and pat the turkey dry to bring the turkey up to room temperature prior to cooking.

Step 9

Cook your turkey your favorite way either in the oven, fryer, grill or in the smoker.
