Ingredients
- Bone Suckin’ Sauce®, 1 cup
- Bone Suckin’® Chicken Seasoning & Rub, 1 tsp
- Zucchini, 2, cut into 1 inch chunks
- Cilantro, 1/4 cup
- Small Onion, 1, cut into quarters
- Lime Juice, 5 Tbsp
- Jalapeno, 1, stem and seeds removed
- Lime Zest, 2 tsp
- Sea Salt, 3 tsp
- Pepper, 1 1/2 tsp
- Cod fillets, 6
Method
Step 1
Place the cod fillets in a bowl and cover with Bone Suckin’ Sauce®, cover and set aside in the refrigerator for 30 minutes.
Step 2
Combine the zucchini, cilantro, Bone Suckin’® Chicken Seasoning & Rub, onion, lime juice, lime zest, jalapeno and salt in a blender. Puree until smooth, cover in a bowl and chill. This may be done up to 3 hours ahead of time.
Step 3
Preheat the grill to a medium-high setting. Place the cod on the grill and cook for 3 to 4 minutes on each side. Transfer the cooked cod onto a plate and top with Zucchini Salsa. Enjoy!

Note: If you prefer a little more spice, keep some of the seeds from the jalepeno in your salsa recipe.
