Ingredients
- Bone Suckin’ Sauce® Sweet Southern™ Original or Spicy, 1/2 cup
- Flour Tortillas, 6
- Pineapple, 1/2, cut into spears
- Chicken Breasts, 2
- Monterey Jack/Cheddar Blend Cheese, 3 cups
- Jalapeno, 1, sliced
- Cilantro 1/4 cup, chopped
- Wooden Skewers, 6
Method
Step 1
Preheat the grill to medium high.
Step 2
Put the chicken breast and 1/4 cup of Bone Suckin’® Sauce in a resealable bag and coat well.
Step 3
Skewer the pineapple slices length wise on wooden skewers, lay them on the grill with jalapeño slices and baste with the remaining Bone Suckin’® Sauce. Grill 5 minutes per side. When done, remove from the grill and set aside on a cutting board.
Step 4
Lay the chicken on the grill and cook for 10 minutes per side. When done, remove from the grill and set aside on a cutting board.
Step 5
Place the tortillas on the grill and top with cheese. Let the tortillas cook for 3 minutes (the cheese should start to melt slightly). While the tortillas are cooking, slice the chicken and pineapple into thin slices.
Step 6
Pull the tortillas from the grill and top 3 tortillas with chicken, pineapple, jalapeños and cilantro. Cover the topped tortillas with the remaining cheese tortillas and slice with a pizza cutter. Serve with Guacamole and Greek Yogurt. Recipe serves 3 to 4. Enjoy!
