Ingredients

  • 2 tsp Bone Suckin’® Seasoning & Rub
  • 1 Prepared Pie Crust
  • 1/4 cup Parmesan shredded
  • 3/4 cup Mayonnaise
  • 3 Tbsp Lemon Juice
  • 1/4 cup Fresh Basil
  • Sea Salt and Pepper
  • 2 cups Cheddar Cheese shredded
  • 5 Roma tomatoes peeled and sliced
  • 1/2 cup Scallions

Equipment

  • 1 Small bowl

Method

  1. Preheat the oven to 350˚ F.
  2. Place the pie crust in the oven and bake for 10 minutes, then set aside to cool.
  3. Pat the tomatoes dry to prevent a soggy pie.
  4. In a small bowl mix together Bone Suckin’® Seasoning, parmesan cheese, mayonnaise, lemon juice, sea salt and pepper, then set aside. Layer the tomatoes in the pie crust; sprinkle some of the basil on top of the tomatoes, cover with the mayonnaise mixture and sprinkle liberally with cheddar cheese. Repeat until pie crust is filled.
  5. Bake for 30-40 minutes until the crust is golden and the pie is bubbly. Allow the pie to cool for at least 20 minutes. The pie is easier to cut and serve when it is cooled slightly. Enjoy!
