Bone Suckin Chicken and Veggies

Bone Suckin’ ALL PURPOSE! Chicken & Vegetables

Ingredients
  

  • 3 Tbsp Bone Suckin'® ALL PURPOSE! Seasoning & Rub
  • 1 Whole Chicken
  • 1 Lemon slices
  • 3 Garlic Cloves peeled
  • 1 cup Celery cut into 1 inch pieces
  • 10 Small Red Potatoes cut into 1 inch pieces
  • 2 cups Carrots cut into 1 inch pieces
  • 1 Yellow Onion quartered

Method
 

  1. Remove inside chicken parts of chicken and save for stock or gravy if needed.
  2. Pat chicken dry.
  3. Season chicken on top and under skin with Bone Suckin' ALL PURPOSE! Seasoning & Rub. Add lemon slices, garlic cloves or onion inside cavity for additional flavor.
  4. Place chicken on grill rack in a roasting pan breast side down.
  5. Cut up potatoes, carrots, celery, and onion and spread around the chicken on grilling rack. It’s okay if they fall through to the pan below.
  6. Roast at 450°F for 15 min. Then turn down oven to 350°F and roast 20 min per pound. Pull chicken when internal temp reaches 165°F. Let sit for 5 minutes.
  7. Transfer cooked veggies to serving platter and pour the juice from the pan over veggies.
