Bone Suckin' Sweet Potato Hashbrowns

 2 tbsp Bone Suckin’® Chicken Seasoning & Rub
 1 ½ lbs Sweet Potatoespeeled and diced
 1 Large Russet Potatopeeled and diced
 3 Bacon Slicescut into 1/2 inch pieces
 2 tbsp Olive Oil
 2 tsp Garlicminced
 1 Red Bell Pepperdiced
 ½ cup Green Onionsthinly sliced
 ½ tsp Sea Salt
 ½ tsp Pepper

Bring a large pot of water to a boil over high heat. Add the potatoes and cook for 5 minutes. Drain and set aside.

Heat a large skillet over medium heat. Add the bacon to skillet and cook for 5 minutes.

Add garlic to the skillet with bacon, stir and cook for 1 minute.

Sprinkle Bone Suckin’® Chicken Seasoning & Rub over the bacon and garlic. Add in the red bell pepper and onions, stir and cook for 2 minutes.

Stir in the potatoes, salt and pepper and increase heat to medium-high. Cook for an additional 7 minutes, stirring the potatoes as they cook. Enjoy!
