Yellow Gazpacho is a refreshing summer soup recipe!
4 cups Yellow Tomatoesdiced
1 cup Cucumberseeded and diced
1 cup Red Peppersdiced
1 cup Yellow Peppersdiced
1 cup Red Oniondiced
1 tsp Garlicminced
1 cup Vegetable Stock
1 tbsp Olive Oil
1 tbsp Raspberry Red Wine Vinegar
1 cup Panko

Combine all of the ingredients and puree in a food processor or blender. Refrigerate until ready to serve. Serve chilled. May garnish with extra vegetables, a dollop of Greek Yogurt and cilantro. One of the best soup recipes. Enjoy!
