Jalapeño Hashbrowns are a good brunch recipe!

 3 lbs Red Potatoes, washed and dicedwashed and diced
 1 Jalapeñofinely chopped
 1 Red Bell Pepperdiced
 ½ Green Bell Pepperdiced
 ½ cup Olive Oil
 1 Medium-Sized Oniondiced

Before cooking the food, place all of the ingredients in a re-sealable bag and shake, making sure the seasoning coats everything well. Spread the mixture on a cookie sheet. Bake at 350˚ F for 45 min. Turn the potatoes every 15 mins. to make sure that they are cooked evenly. Enjoy!
